Hi guys! Happy Friday – I hope you’re all doing well and had a great week! I’ve been doing a lot of meal planning this week, figuring out new things that are healthy (relatively, haha) and that I can whip up without a ton of preparation. I made an awesome, simple quesadilla yesterday and wanted to share it with you here, so be sure to let me know what you think. You can also check out my cupcake recipe because it’s always a good time for baking!
1 package whole grain tortillas/Ezekiel wraps
Salsa/pico de gallo
1 package Applegate fajita or grilled chicken
Pepper jack cheese
You can definitely add more of these to your list based on how many people you’re feeding and how many of these you plan to make/what other dishes require these ingredients.
First I drizzle some olive oil in a skillet and put it on a high heat. I put a tortilla in the skillet and while it heats up I cut the avocado and spread half of it on the tortilla.
I then put the chicken on the tortilla, followed by some shredded pepper jack cheese.
I’ll dice up a tomato and sprinkle that in as well.
By the time you’ve added all of your fillings, the tortilla should be browning, so fold it in half, press it down, and flip it so the color is even.
Plate the quesadilla and cut into triangles. Serve with salsa, pico de gallo, sour cream, etc. Enjoy!
